dark chocolate banana loaf

Hola,

So I always loved baking and most recently I’ve loved making my dark chocolate and banana loaf. Ever had those bananas sitting in your kitchen just slowly going so brown and soft that you don’t wanna eat them?? Well this is perfect for this! Soft brown bananas make are the best for mashing them up and mixing them into the banana loaf mixture.

I’m also ngl I’m really not a fan of just eating banana on there own I don’t know if its the texture or something but can’t say I really enjoy them. However putting bananas into a banana instead is just perfect!

I’ve also added dark chocolate and pecans to my banana loaf and of course if you make this you can add any kind of chocolate and make it with or without pecans on top just whatever floats your boat!

Recipe

Ingredients

  • 2 soft medium sized bananas

  • 160 g light brown sugar

  • 150g softened butter

  • 200g sifted plain flour

  • 1 tsp bicarbonate of soda

  • 1 tsp cinnamon

  • 1 tsp vanilla extra

  • 2 free range eggs

  • 1 tsp light brown sugar

  • 40-50g pecans chopped up

  1. Mash your bananas in a bowl with a fork or potato masher and stir in the vanilla extract

  2. In another bowel beat the butter and light brown sugar together till its well combined

  3. Next add the eggs and mix till well combined

  4. Now it’s banana time! Add the gooey mashed up banana mixture to the bowl and mix all together

  5. Fold in the sifted flour, bicarbonate of soda and cinnamon

  6. Once thats all mixed together chop up the dark chocolate and fold it into the mixture

  7. Then your mixture is ready! pour it into a 8 inch loaf tin that is greased and lined with grease proof baking paper

  8. Lastly sprinkle chopped up pecans and a little bit of brown sugar on top

  9. Bake that at 170C for about 50 minutes or until a skewer comes out clean after sticking it in the middle

  10. Once cooled down remove from tin and enjoy!
